July 2012 Newsletter
Hope you had a Happy 4th of July!
We hope you had a fun and safe holiday. As Erma Bombeck used to say, “You have to love a nation that celebrates its independence every July 4, not with a parade of guns, tanks, and soldiers who file by the White House in a show of strength and muscle, but with family picnics where kids throw Frisbees, the potato salad gets iffy, and the flies die from happiness. You may think you have overeaten, but it is patriotism." Speaking of picnics, here is a recipe Ilene used for her 4th of July get-together. Normally garnished with orange slices, it adapted well for a red, white, and blue dessert.
|Berry Citrus Cake
|1 pkg 2-layer lemon cake mix||FROSTING|
|½ cup orange juice||3-oz pkg cream cheese, softened|
|½ cup water||¼ c butter, softened|
|⅓ cup cooking oil||3 cups powdered sugar|
|3 eggs||2 Tbsp orange juice|
|1 ½ cups fresh or frozen blueberries||1 cup whipping cream|
|1 Tbsp finely shredded orange peel||2 Tbsp finely shredded orange peel|
|1 Tbsp finely shredded lemon peel||1 Tbsp finely shredded lemon peel|
| || |
Combine cake mix, ½ cup orange juice, ½ c water, cooking oil and eggs in mixing bowl. Mix on low speed 30 seconds, then medium speed 2 minutes, scraping sides. Fold in blueberries and 1 Tbsp orange and lemon peel. Bake at 350 degrees 35-40 minutes. Cool on racks 10 minutes and remove from pans and cool thoroughly. To make frosting, in medium bowl, mix cream cheese and butter until fluffy. Add powdered sugar and 2 Tbsp orange juice. Beat until combined. In a separate bowl, beat whipping cream until soft peaks form. Add to cheese mixture along with 2 Tbsp orange peel and 1 Tbsp lemon peel. Beat on low speed until combined. Frost cake and garnish with fresh berries for a red, white, and blue treat.
