July 2010 Newsletter
It’s Summertime and we not only have Computer Tips for you, we have Tri-Tips for you … yes, something REALLY important this time of year – Barbeque Tips & Tricks! Dennis, our Webmaster, grills the best BBQ’d Tri-Tip. What’s his secret? I pried it out of him, so you can benefit from his BBQ wisdom!
First, the marinade … In a 2-gallon ZipLock or suitable sealable container that can be turned over, he adds 1 cup Soy Sauce, ¼ cup Extra Virgin Olive Oil, 3 TBSP Diced Onions (or Onion Powder), 2 TBSP Worcestershire Sauce, 1 TBSP Garlic Powder, ½ TBSP fresh-ground black pepper, and red pepper flakes or ground cayenne pepper to taste. He marinates 2 Tri-Tips in the plastic bag for about an hour, turning the bag several times.

Then he grills the Tri-Tips over medium heat (covered grill) about 20-25 minutes, turning about every 3 minutes. Checking internal temperature with a meat thermometer, he removes them from the grill at 125 degrees F. He covers them loosely (tenting) with aluminum foil for 10 minutes, which allows the meat to continue cooking from residual heat, so it will yield rare to medium-rare meat (about 135 degrees F) in the middle. Best if sliced very thinly at the table and served immediately. Yummmy!!
Food Safety Note: Health officials generally recommend cooking all meats to an internal temperature of 160 degrees F to ensure safety. Good advice, if food safety is your top concern. However, most people prefer their meat cooked to a lower internal temperature. Starting temperature of the meat will affect cooking time. If the Tri-Tip is raw or too rare for your taste, return it to the grill to finish cooking to the desired doneness, checking periodically with the meat thermometer.
